Ingredients (10 Servings)

  • 2 eggs
  • 4 egg yolks
  • 120 gr white flour
  • 490 ml milk
  • 50 ml of olive oil
  • 100 gr xylitol
  • 4 apples
  • 1 gr (½ tsp) nutmeg
  • 110 gr unsalted butter
  • 2 gr (½ tsp) cinnamon

Directions

Mix the egg yoks, xylitol, whole eggs, oil, flour and milk till the mixture is smooth. Heat a small non-stick frying pan over medium heat. Use olive oil cooking spray (or spread it evenly) on the pan. Add one scoop of batter into the pan and the move the pan to scatter the crepe batter evenly on the bottom of the pan. Cook for 20 seconds and then turn the crepe by using a rubber spatula and cook again for 20 seconds. Place the crepes aside.

Peel and cut the apples into 12 slices each. Heat the pan. Melt the butter. Toss in the cinnamon, apples and nutmeg. Cook the apples till tender. Allow them to cool. Prepare the crepes with about 2 tsp of apple filling. Fill the centre of each crepe and roll into a log.
