Ingredients (6 Servings)

  • 250 g fresh or naturally frozen cod
  • 4 minced shallots
  • 1 tablespoon finely chopped coriander
  • 5 pepper berries
  • 1 egg white
  • 50 cl sunflower oil
  • 1 tablespoon rice vinegar
  • ½ tablespoon cornstarch

Mix the shallots, cod and cornstarch to obtain a paste. Add the egg white, rice vinegar, coriander and pepper. Mix again. Heat the oil in a wok on high heat. Form balls with a teaspoon and cook 3 to 5 minutes. Remove them with a spatula, place them on absorbent paper. Serve hot.
