Ingredients (4 Servings)

  • 300 g of fettuccine
  • 500 g of chicken breast, cut into pieces
  • 2 tablespoons of olive oil
  • 2 cloves of minced garlic
  • 250 g roasted peppers
  • salt and pepper
  • chopped parsley to garnish
  • grated Parmesan cheese to decorate

Directions

Boil a large pan of water and cook the fettuccine according to the package instructions.

Drain, wash with cold water and set aside. Meanwhile, chop half of the peppers into small pieces. Put the rest in a food processor or blender and process until smooth. Add the olive oil to a large, non-stick pan and cook the chicken for 5 minutes over medium heat. Season with salt and pepper. Add the garlic and cook for about 30 seconds. Add the chopped and processed peppers and mix. Cook, stirring occasionally for about 10 minutes, until the sauce starts to thicken. Add the fettuccine and parsley and mix very well. Sprinkle with Parmesan cheese.
