  • 500 g cherries, or other seasonal fruit
  • 3 eggs
  • 80 g flour
  • 50 g butter or margarine
  • 50 g sugar or replace it with 5 g of aspartame or stevia or 50 ml (for information: 10 drops = 1 sugar (5 g) or 1 teaspoon = 50 g of sugar)
  • 350 ml milk /3,5 % fat)
  • 1 tablespoon rum (optional)
  • 1 packet vanilla sugar

Directions

Soak the cherries for 2 hours prior to starting the recipe to reduce their potassium content. Dry the fruit, remove the cherry pits. Preheat the oven to 180°C (Th 6), butter an oven dish. Spread the fruit to cover the bottom of the pie pan. Mix the flour, sugar, and add a whole egg. Add 2 egg yolks, melted butter, milk and rum, mixing until it becomes a uniform mixture. Beat the egg whites until stiff and gradually add the mixture, and then pour over the cherries. Bake 15 minutes, then turn down the heat to 150°C (Th 5) and bake for another 20 to 25 minutes depending on your oven. Sprinkle vanilla sugar, enjoy warm or cold.

Don't forget to take your medication to lower the potassium! This clafout can be made with cherries or seasonal fruit. It is important to know that raw fruit contains more potassium than cooked fruit (10 cherries contain 250 mg of potassium versus 195.3 mg for 10 cooked cherries).
